Bowl Baked Oatmeal (Print Version)

Ingredients:

01 - 1 and 3/4 cups (420ml) milk (dairy or nondairy).
02 - 2 large eggs.
03 - 1/2 cup (120ml) pure maple syrup.
04 - 1/4 cup (56g) unsalted butter, melted and slightly cooled.
05 - 1/4 cup (60g) unsweetened applesauce or mashed banana.
06 - 3 cups (255g) old-fashioned whole rolled oats.
07 - 1 teaspoon baking powder.
08 - 1 teaspoon ground cinnamon.
09 - 1 teaspoon pure vanilla extract.
10 - 1/4 teaspoon salt.
11 - 1 and 1/2 cups (225g) fresh or frozen mixed berries (do not thaw).
12 - Optional: 1/2 cup chopped walnuts or pecans for topping.

Instructions:

01 - Preheat oven to 350°F (177°C) and adjust the oven rack to the lower third position. Grease a 9×9 inch or 11×7 inch baking pan with nonstick spray.
02 - In a large bowl, whisk together all ingredients. Pour the mixture into the prepared pan.
03 - If desired, top with chopped nuts or stir them into the oatmeal mixture.
04 - Bake for 35 minutes, or until the center appears almost set for a softer oatmeal. For a drier oatmeal, bake until the center is fully set.
05 - Cool for 5 minutes before serving. Serve with yogurt if desired.
06 - Store leftovers tightly covered in the refrigerator for up to 1 week.
