Chicken Salad Melt (Print Version)

Ingredients:

01 - 2 medium bread slices.
02 - 3/4 cup shredded chicken.
03 - 1/4 cup red bell pepper, diced.
04 - 2 tablespoons red onion, diced.
05 - 1 tablespoon chipotle mayo.
06 - 1/2 tablespoon lime juice.
07 - 1 teaspoon honey.
08 - 1-2 slices pepper jack cheese.
09 - Salt and pepper to taste.
10 - Optional toppings: Cilantro, Parsley, Green onions, Hot sauce.

Instructions:

01 - Heat oven to 400°F.
02 - Line baking sheet with parchment paper.
03 - Mix chicken, peppers, onion. Add mayo, lime juice, honey. Season with salt and pepper.
04 - Toast bread lightly. Spread chicken mixture. Top with cheese.
05 - Cook 6-8 minutes. Optional: broil 1 minute. Top with garnishes.

Notes:

01 - Toast bread first to prevent sogginess.
02 - Great with leftover chicken.
03 - Make salad ahead and assemble when ready.
04 - Any melting cheese works.
