Chicken Salad Melt (Print Version)
Ingredients:

2 medium bread slices.

3/4 cup shredded chicken.

1/4 cup red bell pepper, diced.

2 tablespoons red onion, diced.

1 tablespoon chipotle mayo.
06 -
1/2 tablespoon lime juice.

1 teaspoon honey.
08 -
1-2 slices pepper jack cheese.

Salt and pepper to taste.

Optional toppings: Cilantro, Parsley, Green onions, Hot sauce.
Instructions:

Heat oven to 400°F.

Line baking sheet with parchment paper.

Mix chicken, peppers, onion. Add mayo, lime juice, honey. Season with salt and pepper.

Toast bread lightly. Spread chicken mixture. Top with cheese.

Cook 6-8 minutes. Optional: broil 1 minute. Top with garnishes.

Toast bread first to prevent sogginess.

Great with leftover chicken.
