Nut Brittle (Print Version)

Ingredients:

01 - ½ cup salted butter.
02 - ¾ cup granulated sugar.
03 - ½ cup light corn syrup.
04 - ⅓ cup water.
05 - ½ teaspoon baking soda.
06 - ½ cup almond slices.
07 - ½ cup salted peanuts.

Instructions:

01 - Line a rimmed baking sheet with parchment paper and set it aside. Prepare all ingredients and keep them ready near the stovetop.
02 - Melt the butter in a large saucepan over medium-high heat.
03 - Once the butter is melted, stir in sugar, light corn syrup, and water. Continue stirring until the sugar melts, about 2 minutes.
04 - Attach a candy thermometer and cook the mixture, stirring frequently, until it reaches 300°F (approximately 15 minutes).
05 - When the temperature reaches 300°F, stir in the baking soda.
06 - Quickly add the almonds and salted peanuts, then pour the mixture onto the prepared baking sheet. Spread the brittle mixture as evenly as possible.
07 - Let the brittle cool completely for about 30 minutes before breaking it into pieces.

Notes:

01 - Make sure to have all ingredients ready since the candy needs to be worked with quickly once it reaches the desired temperature.
