Ground Beef Alfredo (Print Version)

Ingredients:

01 - 8 ounces fettuccine.
02 - 1 tablespoon olive oil.
03 - 1 medium onion, diced.
04 - 2 garlic cloves, sliced.
05 - 1 pound ground beef.
06 - 1 cup mushrooms, sliced.
07 - 1/3 cup white wine.
08 - 1/2 cup chicken stock.
09 - 1 teaspoon Italian seasoning.
10 - 1 cup heavy cream.
11 - 1/3 cup Parmesan, grated.
12 - Fresh parsley.
13 - Salt and pepper to taste.

Instructions:

01 - Boil salted water, Cook until al dente, Save 1 cup pasta water, Drain pasta.
02 - Sauté onions and garlic, Add beef, cook until brown, Add mushrooms, Deglaze with wine, Add stock and seasoning, Stir in cream, Reduce heat.
03 - Add pasta to sauce, Mix in Parmesan, Add pasta water if needed, Stir in parsley, Season to taste.

Notes:

01 - Lower heat when adding cream.
02 - Can skip wine, use more stock.
03 - Save pasta water for perfect sauce consistency.
04 - Turkey works instead of beef.
