Maple Mustard Chicken Marinade (Print Version)

Ingredients:

01 - 1 tablespoon mild olive oil.
02 - 2 tablespoons real maple syrup.
03 - 1 tablespoon Dijon mustard.
04 - ½ tablespoon white wine vinegar.
05 - 1 teaspoon dried tarragon.
06 - ¼ teaspoon salt.
07 - 1 garlic clove, minced or pressed.
08 - 1 medium-sized chicken breast (about 8 ounces).

Instructions:

01 - Whisk all marinade ingredients together in a bowl. Set aside.
02 - Place the chicken breast on a cutting board and cover with plastic wrap. Pound the thick end with a meat mallet until it reaches an even thickness.
03 - Transfer the marinade to a resealable plastic bag. Add the chicken breast, seal the bag, and move the chicken around until it's evenly coated.
04 - Marinate in the fridge for 30 minutes.
05 - Remove the chicken from the marinade and bake or grill as desired.
06 - Heat the oven to 400°F. Line a baking sheet with aluminum foil and set a wire rack on it. Place the chicken breast on the rack and bake, uncovered, until it reaches an internal temperature of 165°F (about 25 minutes for a ½-inch thick chicken breast).
07 - Grill the chicken until it reaches an internal temperature of 165°F (about 15 minutes for a ½-inch thick chicken breast).
