Roasted Garlic-Parmesan Cabbage (Print Version)

Ingredients:

01 - ½ large head red or green cabbage.
02 - 6 tablespoons grated Parmesan cheese, plus more for garnish.
03 - 4 medium cloves garlic, finely minced or grated.
04 - 3 tablespoons extra-virgin olive oil.
05 - 3 tablespoons rice vinegar.
06 - 1 tablespoon reduced-sodium soy sauce.
07 - ½ teaspoon salt.
08 - ¼ teaspoon crushed red pepper flakes (optional).

Instructions:

01 - Preheat oven to 425°F. Cut the cabbage into 8 wedges (about 1 inch wide), keeping the core intact.
02 - Combine Parmesan, garlic, olive oil, vinegar, soy sauce, and salt in a small bowl.
03 - Arrange the cabbage wedges, cut-side down, on a large rimmed baking sheet. Brush all sides of the cabbage with the garlic-Parmesan mixture.
04 - Roast until the edges are golden brown, about 20 minutes. Flip and roast until the cabbage is tender and golden, about 10 minutes more.
05 - Garnish with crushed red pepper and additional Parmesan, if desired.

Notes:

01 - This dish pairs well with grilled meats or can be enjoyed as a vegetarian main course.
02 - For added texture, sprinkle some toasted breadcrumbs on top before serving.
