Baked Chicken Tacos Recipe (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - ½ pound shredded cooked chicken.
03 - 1 ounce taco seasoning.
04 - ½ cup diced onion.
05 - 1 (14.5 oz) can diced tomatoes, drained.
06 - 1 (4.5 oz) can diced green chiles, drained.
07 - 10 hard taco shells.
08 - 8 ounces refried beans.
09 - 2 cups shredded Mexican blend cheese.
10 - Jalapeños (optional).
11 - Sour cream (optional).
12 - Salsa (optional).
13 - Shredded lettuce (optional).
14 - Fresh cilantro (optional).

# Instructions:

01 - Preheat oven to 400°F. Spray 9x13 baking dish with nonstick spray.
02 - Sauté onion in oil until translucent. Add chicken, seasoning, drained tomatoes, and chiles. Simmer 5-8 minutes.
03 - Stand taco shells in baking dish. Bake 5 minutes to crisp.
04 - Add tablespoon of beans to each shell, top with chicken mixture and cheese.
05 - Bake 7-10 minutes until cheese melts and shells brown. Add optional toppings.

01 - Uses rotisserie chicken for convenience.
02 - Keeps 3 days in refrigerator.
03 - Can adjust spiciness by omitting ingredients.
