# Ingredients:

→ Blackened Seasoning

01 - 1/2 teaspoon smoked paprika
02 - 1/2 teaspoon kosher salt
03 - 1/4 teaspoon onion powder
04 - 1/4 teaspoon garlic powder
05 - 1/4 teaspoon dried thyme
06 - 1/4 teaspoon cayenne pepper
07 - 1/4 teaspoon ground cumin

→ Main Components

08 - 10 ounces salmon fillet
09 - 1 tablespoon olive oil
10 - 4 fajita-sized tortillas
11 - 2 cups shredded coleslaw mix
12 - 1/2 cup crumbled feta cheese
13 - 1 cup chopped cherry tomatoes

→ Spicy Mayo

14 - 1/4 cup mayonnaise
15 - 1 tablespoon hot sauce
16 - 1 teaspoon fresh lime juice
17 - Salt to taste

# Instructions:

01 - Mix blackened seasoning ingredients in a bowl. Sprinkle over salmon flesh side (both sides if skinless). Drizzle with olive oil and rest for 10 minutes at room temperature.
02 - Heat oil in non-stick pan over medium heat. Cook salmon flesh-side down for 3 minutes, flip, and cook additional 2-3 minutes until desired doneness.
03 - Let salmon rest 4-5 minutes, then flake into bite-sized pieces.
04 - Mix mayonnaise, hot sauce, and lime juice in a bowl. Season with salt to taste.
05 - Warm tortillas and fill with flaked salmon, coleslaw mix, feta, tomatoes, and drizzle with spicy mayo.

# Notes:

01 - Fajita-sized tortillas are 4.5-6.5 inches in diameter
02 - Coleslaw mix can be substituted with any shredded cabbage or greens
03 - Optional toppings include green onions, cilantro, pickled onions, avocado, or jalapeños
