Healthy Blueberry Oatmeal Muffins (Print Version)

# Ingredients:

→ Wet Ingredients

01 - Plain greek yogurt, 1 cup
02 - Milk, 1/4 cup
03 - Honey or maple syrup, 1/3 cup
04 - Large egg, 1
05 - Vegetable oil, 2 tablespoons
06 - Vanilla extract, 1 teaspoon

→ Dry Ingredients

07 - Old fashioned rolled oats, 1 cup
08 - All-purpose flour, 3/4 cup
09 - Baking powder, 1 teaspoon
10 - Ground cinnamon, 1 teaspoon
11 - Baking soda, 1/2 teaspoon
12 - Salt, 1/4 teaspoon

→ Mix-ins

13 - Fresh or frozen blueberries, 1 cup

# Instructions:

01 - Preheat oven to 375°F. Prepare a muffin pan by greasing or lining with paper liners.
02 - In a large bowl, combine greek yogurt, milk, honey, egg, vegetable oil, and vanilla extract until well mixed.
03 - In a separate medium bowl, whisk together oats, flour, baking powder, cinnamon, baking soda, and salt.
04 - Add the dry ingredients to the wet ingredients and mix until just combined. Gently fold in blueberries, being careful not to overmix.
05 - Divide batter into prepared muffin tin, using about 1/4 cup per muffin. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
06 - Let muffins rest in the pan for 10 minutes before transferring to a cooling rack.

01 - Can use either fresh or frozen blueberries
02 - Honey can be substituted with maple syrup
