Cheesy Broccoli Rice Casserole (Print Version)

# Ingredients:

01 - 1 1/2 cups quick cooking white rice.
02 - 1/2 cup (1 stick) unsalted butter.
03 - 1 medium white onion, chopped.
04 - 4 cups fresh broccoli, cut into small pieces.
05 - 1 can (10.5 oz) cream of chicken soup.
06 - 8 ounces processed cheese (Velveeta), divided.
07 - 1/2 cup milk.
08 - 1/3 cup crushed potato chips.

# Instructions:

01 - Heat oven to 350°F. Cook rice according to package.
02 - Melt butter, cook onion and broccoli until onion is clear.
03 - Add soup, half the cheese and milk. Stir until cheese melts.
04 - Mix in cooked rice and pour into greased 8x8 dish.
05 - Add remaining cheese and chips on top. Bake 30 minutes until bubbly.

01 - Can use frozen broccoli.
02 - Makes great leftovers.
03 - Good for holidays or weeknights.
