In a large skillet over medium heat, brown the ground beef completely. Drain excess fat, leaving approximately 2-3 tablespoons in the pan for flavor.

Add the chopped onion and bell pepper to the skillet. Continue cooking for 3-4 minutes until vegetables begin to soften.

Stir in the chopped cabbage, diced tomatoes, creole seasoning, garlic powder, smoked paprika, and black pepper. Cover with a lid and cook for 20-25 minutes, stirring occasionally. Taste and adjust seasonings if needed.

Sprinkle the shredded cheddar cheese evenly over the mixture. Cover again until the cheese is completely melted, about 2-3 minutes.
