Three Cheese Stuffed Manicotti (Print Version)

# Ingredients:

→ Pasta

01 - 8 pieces manicotti

→ Sauce & Cheese

02 - 24 ounces marinara sauce
03 - 15 ounces ricotta cheese
04 - 2 cups shredded mozzarella cheese, plus extra for topping
05 - 1/2 cup grated Parmesan cheese

→ Seasonings & Binders

06 - 2 large eggs
07 - 2 tablespoons fresh chopped parsley
08 - 1/2 teaspoon salt
09 - 1/4 teaspoon black pepper

# Instructions:

01 - Cook manicotti according to package directions. Drain and place on parchment paper to cool.
02 - Heat oven to 350°F. Coat 9x13 baking dish with cooking spray and spread thin marinara layer on bottom.
03 - Mix ricotta, mozzarella, Parmesan, eggs, parsley, salt, and pepper until smooth.
04 - Carefully fill cooled manicotti shells with cheese mixture using spoon, fingers, or pastry bag. Fill from both ends for best results.
05 - Arrange filled manicotti in single layer over sauce. Pour remaining marinara on top.
06 - Cover with foil, bake 40 minutes. Add extra mozzarella if desired, bake uncovered 5-10 minutes more until melted.

01 - Let rest 5-10 minutes before serving for filling to set
