Cook manicotti according to package directions. Drain and place on parchment paper to cool.

Heat oven to 350°F. Coat 9x13 baking dish with cooking spray and spread thin marinara layer on bottom.

Mix ricotta, mozzarella, Parmesan, eggs, parsley, salt, and pepper until smooth.

Carefully fill cooled manicotti shells with cheese mixture using spoon, fingers, or pastry bag. Fill from both ends for best results.

Arrange filled manicotti in single layer over sauce. Pour remaining marinara on top.

Cover with foil, bake 40 minutes. Add extra mozzarella if desired, bake uncovered 5-10 minutes more until melted.
