Cheeseburger Soup (Print Version)

# Ingredients:

01 - 1 pound ground beef.
02 - 3/4 cup onion, chopped.
03 - 3/4 cup carrots, shredded.
04 - 3/4 cup celery, diced.
05 - 1 teaspoon dried basil.
06 - 1 teaspoon dried parsley.
07 - 4 tablespoons butter, divided.
08 - 3 cups chicken broth.
09 - 4 cups potatoes, peeled and diced.
10 - 1/4 cup flour.
11 - 2 cups Velveeta cheese, cubed.
12 - 1 1/2 cups milk.
13 - 3/4 teaspoon salt.
14 - 1/4 to 1/2 teaspoon pepper.
15 - 1/4 cup sour cream.

# Instructions:

01 - Brown beef, drain and set aside. Sauté vegetables in 1 tablespoon butter until tender. Add herbs while cooking.
02 - Add broth, potatoes, and beef. Boil then simmer for 10-12 minutes until potatoes are tender.
03 - Melt 3 tablespoons butter. Cook with flour for 3-5 minutes. Add to soup, bring to boil, and cook for 2 minutes.
04 - Reduce heat. Add cheese, milk, and seasonings. Cook until cheese melts. Remove from heat and stir in sour cream.
