Pesto Chicken Garlic Bread (Print Version)

# Ingredients:

01 - 2-3 garlic bread baguettes
02 - 400g chicken mini fillets
03 - 1 red pepper, very thinly sliced
04 - 1 small red onion, sliced
05 - 190g red pesto
06 - 250g mozzarella & cheddar mix

# Instructions:

01 - Heat oven to 200°C/400°F. Cook chicken in oil until golden, 3-4 minutes per side
02 - Fry pepper and onion 12 minutes until soft. Add chicken back, stir in pesto
03 - Slice baguettes lengthwise, bake 7 minutes
04 - Fill bread with chicken mixture, top with cheese
05 - Bake 5-6 minutes until cheese browns

# Notes:

01 - Stores in fridge up to 3 days
02 - Can be frozen, wrapped in foil
03 - Reheat at 180°C for 12-14 minutes
