Cherry Mash Truffles (Print Version)

# Ingredients:

01 - ¼ cup unsalted butter, softened.
02 - 3 cups powdered sugar.
03 - 3 teaspoons LorAnn Cherry Bakery Emulsion.
04 - 2 tablespoons milk.
05 - ¼ teaspoon red food coloring.
06 - 12 ounces semi sweet chocolate.
07 - 2 teaspoons coconut oil.
08 - ¼ cup chopped peanuts.

# Instructions:

01 - Mix butter with powdered sugar gradually in stand mixer. Add milk, cherry emulsion and food coloring until combined.
02 - Scoop 2-teaspoon balls onto sheet pan. Freeze for 2 hours until solid.
03 - Melt chocolate and coconut oil together. Stir in peanuts.
04 - Dip frozen cherry balls in chocolate mixture in batches. Place on parchment-lined sheet.
05 - Freeze until set. Store in refrigerator.
