Caesar Pasta Salad (Print Version)

# Ingredients:

01 - 1 pound boneless skinless chicken breasts.
02 - 1 tablespoon olive oil.
03 - 1 pound farfalle pasta.
04 - 3 Romaine lettuce hearts (12 ounces), chopped.
05 - 1 1/2 cups Caesar dressing.
06 - Parmesan cheese for topping.
07 - Salt and pepper to taste.
08 - 1 tablespoon butter.
09 - 2 cloves garlic, minced.
10 - 1/2 cup Panko breadcrumbs.

# Instructions:

01 - Boil large pot of salted water for pasta.
02 - Melt butter, cook garlic for 1 minute. Add breadcrumbs, salt, pepper. Cook 2-3 minutes until golden. Set aside.
03 - Season chicken with salt and pepper. Cook in oil 4-5 minutes per side. Rest 5-10 minutes, then slice.
04 - Boil pasta until al dente. Rinse with cold water until chilled.
05 - Combine pasta, lettuce, chicken, dressing. Top with breadcrumbs and Parmesan. Serve immediately or chill up to 4 hours.

# Notes:

01 - Best served fresh.
02 - Can use rotisserie chicken.
03 - Keep breadcrumbs separate until serving.
04 - Add lettuce last to prevent wilting.
05 - Good for summer meals.
06 - Can make components ahead.
