Chicken Fritters (Print Version)

# Ingredients:

01 - 1 ½ cups leftover shredded chicken breast (9 oz).
02 - 2 tbsp cream cheese, softened.
03 - ¼ cup shredded mozzarella cheese.
04 - 1 egg.
05 - 2 tbsp all purpose flour.
06 - ½ tsp salt (optional).

# Instructions:

01 - Add chicken to bowl and chop into small pieces using kitchen scissors or knife until you have 1.5 cups.
02 - Add cream cheese, mozzarella, egg, flour, and salt to the bowl with chicken. Mix well until combined.
03 - Heat 1 tablespoon of oil or butter in a frying pan on medium-low heat.
04 - Scoop heaping tablespoon-sized portions onto pan and press down with back of spoon or spatula to shape into fritters.
05 - Cook until golden, about 2-3 minutes per side. Transfer to paper towel-lined plate to cool.

01 - Kitchen scissors work best for chopping leftover chicken quickly.
02 - Watch fritters closely as they cook quickly due to pre-cooked chicken.
