Add chicken to bowl and chop into small pieces using kitchen scissors or knife until you have 1.5 cups.

Add cream cheese, mozzarella, egg, flour, and salt to the bowl with chicken. Mix well until combined.

Heat 1 tablespoon of oil or butter in a frying pan on medium-low heat.

Scoop heaping tablespoon-sized portions onto pan and press down with back of spoon or spatula to shape into fritters.

Cook until golden, about 2-3 minutes per side. Transfer to paper towel-lined plate to cool.
