Chicken Quesadillas (Print Version)

# Ingredients:

01 - 1 pound chicken tenderloins (or breast strips).
02 - 1 cup thick salsa.
03 - 1/2 cup water.
04 - 4 large flour tortillas (10-inch).
05 - 3 cups Mexican blend cheese.
06 - Olive oil for cooking.
07 - 3/4 teaspoon salt.
08 - 1/2 teaspoon smoked paprika.
09 - 1/2 teaspoon garlic powder.
10 - 1/2 teaspoon dried oregano.
11 - 1/2 teaspoon ground cumin.
12 - Sour cream.
13 - Lime wedges.

# Instructions:

01 - Mix spices in bowl. Coat chicken evenly.
02 - Heat oil in skillet. Cook 2-3 minutes first side. Flip, cook 3-4 minutes more. Remove and shred.
03 - Add salsa and water to pan. Reduce 7-9 minutes. Mix with shredded chicken.
04 - Heat oil in clean skillet. Add tortilla. Top with cheese. Add chicken mixture on half. Fold when cheese melts.
05 - Cook 1-2 minutes per side.
