Chocolate Cherry Cookies (Print Version)

# Ingredients:

01 - 1 1/2 cups all-purpose flour.
02 - 1/2 cup Dutch-process cocoa.
03 - 1/2 teaspoon baking powder.
04 - 1/2 teaspoon sea salt.
05 - 3/4 cup unsalted butter, softened.
06 - 3/4 cup light brown sugar.
07 - 1/4 cup white sugar.
08 - 2 egg yolks, room temperature.
09 - 1 1/2 teaspoons vanilla extract.
10 - 5 ounces cherry dark chocolate, chopped.
11 - 6 tablespoons heavy cream.
12 - 1/4 cup cherry preserves.

# Instructions:

01 - Whisk dry ingredients, cream butter and sugars, add yolks and vanilla, mix in dry ingredients.
02 - Scoop 32 portions, roll into balls, make indents, chill 1 hour.
03 - Heat oven to 350°F, 8 cookies per sheet, bake 9-11 minutes, re-press centers hot, cool completely.
04 - Pour hot cream over chocolate, stir until smooth, mix in preserves.
05 - Fill centers with ganache, chill 10-15 minutes.

01 - Use Dutch cocoa for best flavor.
02 - Can freeze unfilled cookies.
03 - Reshape while hot.
04 - Keeps 3 days in airtight container.
