Butter a 9x13 pan and set aside.

Combine sugar, corn syrup, cream and butter in large saucepan. Cook over medium heat, stirring constantly, until mixture reaches 240 degrees (up to 30 minutes).

Remove from heat and stir in cinnamon oil and red food coloring.

Pour into buttered pan. Cool to room temperature, then refrigerate to set.

Let sit 10-15 minutes at room temperature before cutting. Wrap pieces in wax paper for storage.
