Cinnamon Caramels (Print Version)

# Ingredients:

01 - 2 cups white sugar.
02 - 1½ cups light corn syrup.
03 - 1½ cups heavy cream.
04 - 1 cup butter, plus more for pan.
05 - 2 teaspoons cinnamon oil.
06 - 1 teaspoon red food color gel.

# Instructions:

01 - Butter a 9x13 pan and set aside.
02 - Combine sugar, corn syrup, cream and butter in large saucepan. Cook over medium heat, stirring constantly, until mixture reaches 240 degrees (up to 30 minutes).
03 - Remove from heat and stir in cinnamon oil and red food coloring.
04 - Pour into buttered pan. Cool to room temperature, then refrigerate to set.
05 - Let sit 10-15 minutes at room temperature before cutting. Wrap pieces in wax paper for storage.

# Notes:

01 - Must reach exactly 240 degrees.
02 - Requires constant stirring.
03 - Wrap individually for storage.
