Cocoa Salmon (Print Version)

# Ingredients:

01 - 4 salmon fillets (4 ounces each).
02 - 1/2 cup orange juice.
03 - 1 tablespoon brown sugar, packed.
04 - 2 teaspoons granulated sugar.
05 - 1 teaspoon baking cocoa.
06 - 1/4 teaspoon cayenne pepper.
07 - 1/4 teaspoon ground cinnamon.
08 - 1/8 teaspoon salt.
09 - 1/8 teaspoon pepper.
10 - 1 medium navel orange, sliced.
11 - 4 tablespoons butter, melted.

# Instructions:

01 - Heat oven to 400°F.
02 - Pour orange juice in shallow dish, add salmon skin-side up, let stand 15 minutes.
03 - Mix sugars, cocoa, cayenne, add cinnamon, salt, pepper.
04 - Remove from juice, place skin-side down on lined sheet, rub with spice mixture, top with orange slices, brush with melted butter.
05 - Bake 20-25 minutes until flaky.
