Coconut Banana Matcha Muffins (Print Version)

# Ingredients:

→ Dry Ingredients

01 - All-purpose flour (2 cups)
02 - Matcha powder (2 tablespoons)
03 - Baking powder (1½ teaspoons)
04 - Salt (¼ teaspoon)

→ Wet Ingredients

05 - Overripe bananas (2)
06 - Sugar (⅓ cup)
07 - Coconut oil (¼ cup, melted)
08 - Vanilla extract (1 teaspoon)
09 - Egg (1)
10 - Whole milk (1 cup)

→ Topping

11 - Sweetened coconut flakes (¼ cup, optional)

# Instructions:

01 - Preheat oven to 350°F
02 - Combine flour, matcha powder, baking powder, and salt in large bowl
03 - Mash bananas in separate bowl, add sugar, coconut oil, egg, and vanilla. Beat until well combined
04 - Stir milk into banana mixture, then fold in dry ingredients until just combined
05 - Divide batter among 12 greased or lined muffin cups, top with coconut flakes if using
06 - Bake 20-22 minutes until toothpick comes out clean. Cool in pan 15 minutes, then remove to wire rack
