Corn Fritters (Print Version)

# Ingredients:

01 - 6 tablespoons milk.
02 - 1 large egg.
03 - 2 cups corn kernels (about 3 ears).
04 - 3/4 cup scallions, chopped.
05 - 1 cup sharp cheddar cheese, grated.
06 - 1 teaspoon apple cider vinegar.
07 - 1 1/2 teaspoons sea salt.
08 - 1 teaspoon onion powder.
09 - 1/2 teaspoon baking powder.
10 - 1/2 teaspoon garlic powder.
11 - 1/4 teaspoon cayenne pepper.
12 - 1/4 teaspoon smoked paprika.
13 - Black pepper to taste.
14 - 3/4 cup cornmeal.
15 - 1/2 cup all-purpose flour.
16 - Oil for frying.
17 - Extra scallions.
18 - Sour cream.

# Instructions:

01 - Whisk milk and egg. Add corn, scallions, cheese, vinegar.
02 - Sprinkle in all spices. Add salt and pepper. Stir well.
03 - Mix in cornmeal and flour. Stir until combined.
04 - Heat oil in skillet. Use 1/4 cup portions. Flatten to 3-inch disks. Cook 2-3 minutes per side. Work in batches.

# Notes:

01 - Fresh corn works best but can use frozen.
02 - Don't crowd pan when frying.
03 - Best served hot.
04 - Makes 10-12 fritters.
