Cranberry Orange Chicken (Print Version)

# Ingredients:

01 - 5-6 bone-in skin-on chicken thighs.
02 - 1 tablespoon olive oil.
03 - 1/2 teaspoon salt.
04 - 1/2 teaspoon pepper.
05 - 2 cloves garlic, minced.
06 - 1 large shallot, diced (1/3 cup).
07 - 2/3 cup orange juice.
08 - 1 cup chicken stock.
09 - 1 tablespoon orange zest.
10 - 1 1/2 tablespoons honey.
11 - 1 tablespoon apple cider vinegar.
12 - 1 cup cranberries, plus 2 tablespoons for garnish.
13 - 1/2 orange, thinly sliced.

# Instructions:

01 - Heat oven to 400°F. Season chicken with salt and pepper.
02 - Cook chicken in oiled skillet 4-5 minutes per side until golden. Remove to plate.
03 - Cook shallot and garlic 4-5 minutes. Add liquids, honey, and cranberries. Simmer 8-10 minutes until thickened.
04 - Return chicken to pan with extra cranberries and orange slices. Bake 15-20 minutes until chicken reaches 165°F.
