Creamy Lemon Chicken Gnocchi Soup (Print Version)

# Ingredients:

→ Baked Lemon Chicken

01 - Organic chicken breasts, 2 pounds
02 - Extra virgin olive oil, 2 tablespoons
03 - Fresh lemon, thinly sliced, 1
04 - Fresh lemon zest, 1 teaspoon
05 - Sea salt and freshly-ground black pepper to taste

→ Soup Base

06 - Potato gnocchi (homemade or store-bought), 16 ounces
07 - Unsalted butter, 2 tablespoons
08 - Fresh garlic cloves, minced, 4
09 - Fresh thyme sprigs, 4
10 - All-purpose seasoning blend, 2 teaspoons
11 - Sea salt, 1 teaspoon

→ Soup Finishing

12 - Organic all-purpose flour, 4 tablespoons
13 - Organic chicken stock/broth, 5 cups
14 - Fresh lemon juice from 1 lemon
15 - Fresh lemon zest, 1 teaspoon
16 - Organic heavy cream, 1 1/2 cups
17 - Fresh kale, de-stemmed and chopped, 2 cups
18 - Freshly-grated parmesan cheese, 1 cup

# Instructions:

01 - Preheat oven to 400°F. Place seasoned chicken breasts on a lined baking sheet, drizzle with olive oil, and season with salt and pepper. Top with lemon zest and slices. Bake 15-20 minutes, flipping halfway through, until golden and cooked through. Cool slightly before slicing.
02 - In a dutch oven over medium-high heat, melt butter and sauté minced garlic until fragrant, 1-2 minutes. Stir in flour, salt, and all-purpose seasoning blend until well combined.
03 - Gradually add chicken stock, stirring constantly to prevent lumps. Add heavy cream, lemon juice, zest, kale, thyme sprigs, sliced chicken, and gnocchi. Simmer 10-12 minutes until gnocchi floats and is tender.
04 - Stir in parmesan cheese until melted and creamy. Simmer additional 1-2 minutes. Remove thyme sprigs before serving hot, optionally with bread or salad.

02 - Recipe can be made gluten-free by using GF gnocchi and ensuring other ingredients are GF-certified
03 - For vegan version, substitute chicken with plant-based alternatives and use coconut cream instead of heavy cream
