Creamy Mushroom Chicken (Print Version)

# Ingredients:

01 - 2 large chicken breasts.
02 - Salt and pepper to taste.
03 - Flour for dredging.
04 - 2 tablespoons olive oil.
05 - 2 tablespoons butter.
06 - 12 ounces mushrooms (cremini or white), sliced.
07 - 1/4 teaspoon Italian seasoning.
08 - 3 cloves garlic, minced.
09 - 1/2 cup chicken broth.
10 - 1/2 teaspoon lemon juice.
11 - 1/2 teaspoon Dijon mustard.
12 - 1 cup heavy cream.

# Instructions:

01 - Cut chicken breasts lengthwise into four cutlets. Season with salt and pepper, then coat in flour.
02 - Pan-fry chicken in oil over medium-high heat for 4-5 minutes per side until golden. Remove from pan.
03 - Add butter and cook mushrooms with Italian seasoning until water releases and they're seared. Remove from pan.
04 - Add garlic, broth, lemon juice, and mustard. Reduce by half, then add cream.
05 - Return chicken and mushrooms to pan. Cook 5 minutes until chicken is done and sauce thickens.

02 - Sauce can be made thinner with half-and-half.
