Creamy Shrimp and Spinach Soup (Print Version)

# Ingredients:

01 - 2 tablespoons butter.
02 - 1/2 cup finely chopped onion.
03 - 2 large garlic cloves, finely chopped.
04 - 2 tablespoons all-purpose flour.
05 - 2 cups reduced sodium chicken stock.
06 - 1/2 cup half and half.
07 - 1 teaspoon Italian seasoning.
08 - 1/4 to 1/2 teaspoon salt.
09 - 1/4 teaspoon black pepper.
10 - 1/8 teaspoon red pepper flakes.
11 - 3/4 pound shrimp, peeled and deveined.
12 - 2 handfuls baby spinach.
13 - 1/4 cup grated parmesan.

# Instructions:

01 - Melt butter and cook onion and garlic for 3 minutes over medium heat.
02 - Stir in flour and cook 1-2 minutes to make roux.
03 - Pour in stock and half-and-half. Add seasonings and simmer until slightly thickened, 3-4 minutes.
04 - Add shrimp, spinach and parmesan. Cook 3-4 minutes until shrimp is done and spinach wilts.

# Notes:

01 - Adjust salt based on stock sodium content.
02 - Can use whole milk instead of half-and-half.
