Creamy White Chicken Chili (Print Version)

# Ingredients:

→ Base

01 - 2 tablespoons olive oil
02 - 1 medium onion, diced
03 - 3 garlic cloves, minced
04 - 1 jalapeño, seeded and finely chopped (optional)

→ Spices

05 - 1 teaspoon ground cumin
06 - 1 teaspoon chili powder
07 - 1/2 teaspoon paprika
08 - 1/2 teaspoon dried oregano
09 - Salt and black pepper to taste

→ Main Ingredients

10 - 4 cups chicken broth
11 - 3 cups cooked and shredded chicken
12 - 2 cans (15 oz each) white beans, drained and rinsed
13 - 1 can (4 oz) diced green chilies
14 - 1 cup frozen corn

→ Creamy Elements

15 - 1/2 cup cream cheese, softened
16 - 1/2 cup heavy cream
17 - Juice of 1 lime

→ Garnish

18 - Fresh cilantro, chopped
19 - Shredded Monterey Jack or cheddar cheese

# Instructions:

01 - Heat oil, cook onion until soft, add garlic and jalapeño until fragrant.
02 - Stir in cumin, chili powder, paprika, and oregano. Toast for 1-2 minutes.
03 - Add broth, chicken, beans, chilies, and corn. Simmer 20 minutes.
04 - Stir in cream cheese until melted. Add heavy cream and lime juice. Season to taste.
