Crispy Beef Tacos (Baked Not Fried!) (Print Version)

# Ingredients:

01 - 1 pound ground beef (85-90% lean).
02 - 2 tablespoons taco seasoning.
03 - 1/2 cup water.
04 - 3 cloves garlic, minced.
05 - 1 lime, juiced.
06 - 4 ounces diced green chiles.
07 - 8 ounces colby jack cheese.
08 - 8-10 corn tortillas.
09 - 1/2-3/4 cup Mexican crema.
10 - 2 chipotle peppers in adobo.
11 - 1 teaspoon honey.
12 - 1 clove garlic.
13 - 1/2 lime juice.
14 - Oil for brushing.

# Instructions:

01 - Preheat oven to 425°F. Oil 2 baking sheets. Cook beef until no longer pink, drain fat.
02 - Add seasonings, water, garlic, lime, chiles to beef. Cook until moisture evaporates. Stir in 1 cup cheese.
03 - Warm tortillas. Fill one side with beef mixture and cheese. Fold over and brush with oil.
04 - Bake 15-20 minutes until crispy.
05 - Blend crema ingredients until smooth. Serve with tacos and toppings.
