Crockpot Chicken Enchilada Casserole (Print Version)

# Ingredients:

01 - 3 chicken breasts.
02 - 1 spoon taco spice.
03 - Salt and pepper.
04 - 2 cans red enchilada sauce.
05 - 1 can Rotel tomatoes, drained.
06 - 12 corn tortillas, cut up.
07 - 2 cups mixed cheese, split.

# Instructions:

01 - Spray slow cooker with cooking spray.
02 - Put chicken in bottom. Add taco spice, salt, pepper.
03 - Pour sauce and tomatoes over chicken.
04 - Cover and cook on low for 4 to 5 hours.
05 - Cut tortillas while waiting.
06 - Pull chicken apart with forks when done.
07 - Mix in tortillas and half the cheese.
08 - Make flat, put rest of cheese on top.
09 - Cover, cook 30 more minutes till melty.

01 - Pick sauce how spicy you like.
02 - Good with sour cream, avocado, cilantro.
