Tortellini Sausage Soup (Print Version)

# Ingredients:

01 - 16 ounces Italian sausage.
02 - 1/2 medium onion, chopped.
03 - 4 garlic cloves, minced.
04 - 2 medium carrots, sliced.
05 - 2 celery stalks, finely chopped.
06 - 1 can (28 oz) crushed tomatoes.
07 - 1 can (14 oz) diced tomatoes with juice.
08 - 4 cups chicken broth.
09 - 2 packages (9 oz each) refrigerated cheese tortellini.
10 - 3/4 cup heavy cream (optional).
11 - 2 cups fresh baby spinach, packed.
12 - Salt and pepper to taste.

# Instructions:

01 - Sausage and onions (7-8 minutes). Break up sausage while cooking. Remove excess fat if needed. Add garlic, cook 30 seconds.
02 - Cooked sausage mixture, carrots, celery, both cans tomatoes, chicken broth.
03 - LOW: 7-8 hours, HIGH: 4-5 hours.
04 - Add tortellini, heavy cream, spinach. Switch to HIGH. Stir occasionally. Season with salt and pepper.

# Notes:

01 - For shorter cook time, chop carrots finely.
02 - Use ground sausage or remove from casings.
03 - Can be spicy sausage if preferred.
04 - Leftovers absorb broth, may need extra when reheating.
05 - Best fresh.
