Place popped plain unsalted popcorn in a large mixing bowl and set aside.

In a medium saucepan, melt unsalted butter over medium heat. Add mini marshmallows and stir continuously until fully melted and smooth.

Remove from heat and stir in vanilla extract. If desired, divide the mixture into separate bowls and add a drop of food coloring to each.

Pour the marshmallow mixture over the popcorn and gently fold to coat evenly.

Add pastel candy-coated chocolates and stir just until combined.

Spray your hands with cooking spray and shape the mixture into 3-inch balls.

Place formed popcorn balls on wax paper and allow them to cool and set completely before serving.
