Cheese Fries (Print Version)

# Ingredients:

01 - 2 medium to large russet potatoes.
02 - 2 tablespoons olive oil.
03 - Seasoning salt (or salt and pepper).
04 - 1 tablespoon salted butter (14g).
05 - 1 tablespoon all-purpose flour (8g).
06 - 3/4 cup milk (any percentage).
07 - 3/4 cup sharp cheddar cheese, shredded (3oz).
08 - Pinch of cayenne.
09 - Salt and pepper to taste.

# Instructions:

01 - Heat oven to 475°F. Peel and cut potatoes into 8 wedges each. Toss with oil. Arrange on greased baking sheet. Season with salt.
02 - Cook 15 minutes. Flip and season other side. Bake 10-20 minutes more until crispy. Watch closely at end.
03 - Melt butter. Whisk in flour, cook 30-60 seconds. Slowly add milk, whisking constantly. Cook until thickened (3-4 minutes). Remove from heat. Add cheese gradually. Season with cayenne, salt, pepper.
04 - Serve fries with cheese sauce on top.

# Notes:

01 - Use freshly shredded cheese.
02 - Don't overcrowd fries.
03 - Add milk slowly to prevent lumps.
04 - Serve immediately.
05 - Can use different cheeses.
