Easy One Pot Queso Chicken And Rice (Print Version)

# Ingredients:

01 - 1 pound chicken breast, cut small.
02 - 1 spoon olive oil.
03 - 1 spoon garlic powder.
04 - 1/2 spoon onion powder.
05 - 1/2 spoon cumin.
06 - 1/2 spoon salt.
07 - 1/2 spoon black pepper.
08 - 2 1/4 cups chicken broth.
09 - 1 can (15 oz) nacho cheese sauce.
10 - 1 can (10 oz) Rotel tomatoes.
11 - 1 1/2 cups white rice.

# Instructions:

01 - Cut chicken into 1-inch bits.
02 - Heat oil in a big pan with a lid.
03 - Put in chicken and all spices.
04 - Cook until chicken hits 165°.
05 - Pour off excess liquid.
06 - Add broth, cheese sauce, tomatoes and let bubble.
07 - Stir in rice.
08 - Cover, turn heat to low.
09 - Cook for 20-25 minutes until rice is soft.
10 - Top with sour cream, tomatoes, or avocado if you want.

# Notes:

01 - Want it spicy? Use hot Rotel or add cayenne.
02 - Can substitute ground meat instead.
03 - Add beans for extra filling.
