Casserole with Tacos (Print Version)

# Ingredients:

→ Base

01 - 1 lb of ground beef (lean)
02 - 1/2 medium onion, diced
03 - 1 tbsp of olive oil

→ Seasonings

04 - 1/2 tsp cumin powder
05 - 1/2 tsp of garlic powder
06 - 1 tbsp of chili powder

→ Casserole Ingredients

07 - 2 cups of Nacho Cheese Doritos, crushed
08 - 2 cups (divided) shredded cheddar or Mexican cheese blend
09 - 1 (15.5 oz) salsa jar
10 - 1 (12 oz) can of sweet corn, strained
11 - 1 (14 oz) can of black beans, rinsed and drained

→ Optional Toppings

12 - Pick from: sour cream, black olives, scallions, avocado, lettuce, chopped tomatoes, fresh cilantro

# Instructions:

01 - Heat your oven to 350°F and adjust the rack to sit in the middle.
02 - Warm the oil in a skillet on medium-high heat and fry the beef for roughly 5 minutes, breaking it apart as it cooks. Add the onions and spices and cook for another 5 minutes.
03 - Take a 9x13 dish and spread the crushed Doritos evenly across the bottom.
04 - Drain any grease from the cooked beef. Mix in the corn, salsa, beans, and one-half of the cheese until the cheese melts. Spread this tasty mixture on top of the Doritos in the dish.
05 - Sprinkle the remaining cheese over the top, leave the dish uncovered, and bake for 15-20 minutes or until the cheese is melted and bubbly. Serve warm with whichever toppings you like.
