Healthy Cabbage Detox Soup (Print Version)

# Ingredients:

→ Vegetables

01 - 1 medium head cabbage, chopped
02 - 1 onion, diced
03 - 2 carrots, peeled and chopped
04 - 2 celery stalks, chopped
05 - 2 cloves garlic, minced
06 - 1 (14.5 oz) can diced tomatoes, undrained

→ Liquids & Oil

07 - 4 cups vegetable or chicken broth
08 - 1 tablespoon olive oil
09 - 1 tablespoon lemon juice (optional)

→ Seasonings

10 - 1 teaspoon ground turmeric
11 - 1 teaspoon ground cumin
12 - 1/2 teaspoon ground black pepper
13 - 1/2 teaspoon paprika
14 - Salt to taste
15 - 1 tablespoon fresh parsley, chopped (optional)

# Instructions:

01 - Heat oil, cook onion, carrots, and celery 5-7 minutes until soft. Add garlic, cook 1-2 minutes more
02 - Stir in cabbage and all seasonings until well coated
03 - Add broth and tomatoes. Bring to simmer, reduce heat, cover and cook 25-30 minutes until cabbage is tender
04 - Season with salt and optional lemon juice. Garnish with parsley if desired

# Notes:

01 - Can add protein like chicken, beans, or tofu
02 - Stores 4 days in fridge or 2 months frozen
03 - Red cabbage can be used for color variation
