Take a medium-sized bowl and mix together the softened cream cheese, Parmesan, diced artichokes, roasted peppers, chopped olives, garlic powder, Italian herbs, and black pepper. Blend until everything's combined and smooth.

Lay a large piece of plastic wrap on your countertop. Spoon the cheese mixture onto it and work it into a log shape by folding and rolling. Wrap the plastic tightly around the log and chill in the fridge for about 2 hours or until it's firm enough to handle.

Once the cheese log has set, spread the chopped parsley evenly on a plate. Take the log out of the fridge, unwrap it, and roll it in the parsley. Press gently to ensure the parsley sticks all over.

Place the parsley-covered log on a serving tray. Arrange some rosemary sprigs and a handful of cranberries around it to make it look extra festive!

Set out your coated cheese log with a mix of crackers, toasted baguette pieces, or crunchy veggie sticks for dipping. Enjoy!
