# Ingredients:

01 - 1/2 teaspoon salt, split in two portions
02 - 1/2 lime, squeezed for juice
03 - 1 bunch cilantro, finely minced
04 - 1 large jalapeño, diced
05 - 1 medium white onion, cut into small pieces
06 - 2 cups cherry tomatoes, chopped into small bits

→ Chicken

07 - 1 cup mozzarella cheese, shredded
08 - 1/4 teaspoon ground black pepper
09 - 1/4 teaspoon red chili flakes
10 - 1 tablespoon garlic powder
11 - 1 teaspoon paprika
12 - 1/2 teaspoon cumin powder
13 - 2 pounds chicken breast, boneless and diced

# Instructions:

01 - Turn your oven on and set it to 400°F (200°C). While it heats up, grab a rectangular 9×13-inch casserole pan. Lightly coat the inside with cooking spray so the food won't stick, making cleanup easier later.
02 - In a bowl, toss together the cherry tomatoes, jalapeño, onion, and cilantro. Add lime juice and 1/4 teaspoon salt to the mix. Stir carefully to combine everything evenly. Let it sit so the flavors start blending together while you focus on the chicken.
03 - Spread the diced chicken breasts out in the casserole pan, making sure the pieces are evenly spaced. Sprinkle over the cumin, paprika, black pepper, chili flakes, garlic powder, and the rest of the salt. Use either tongs or your hands to mix the chicken and coat every piece with seasoning.
04 - Spoon your prepared tomato mixture over the seasoned chicken, making sure to spread it out evenly. Pour any juices from the bowl over as well so the chicken stays juicy. Finish by covering everything with a layer of shredded mozzarella, scattering it evenly across the surface.
05 - Pop the casserole pan into your oven and bake uncovered for around 25 to 30 minutes. The casserole is ready when the chicken is thoroughly cooked (it should hit 165°F/74°C inside), the cheese is bubbly and golden, and the tomato mixture has softened into a juicy sauce. The edges might start to bubble too.
06 - Take your casserole out and let it sit for 5 minutes to settle before slicing in. Sprinkle some freshly chopped cilantro on top for a fresh and bright touch. Serve it hot with whatever you like—maybe rice, warm tortillas, or a salad on the side.
