Crispy Fried Cod Fish Sandwich (Print Version)

# Ingredients:

→ Fish

01 - Icelandic Cod or similar fish (24 ounces)
02 - Salt and pepper to season

→ Dry Dredge

03 - All-purpose flour (1 cup)
04 - Old Bay Seasoning (½ tablespoon)

→ Wet Dredge Batter

05 - All-purpose flour (1 cup)
06 - Old Bay Seasoning (1 tablespoon)
07 - Paprika (½ tablespoon)
08 - Turmeric (1 teaspoon)
09 - White pepper (½ teaspoon)
10 - Baking powder (½ teaspoon)
11 - Large egg (1)
12 - Sparkling water (1 cup)
13 - Salt and pepper to taste

→ Tartar Sauce

14 - Mayonnaise (½ cup)
15 - Dill pickle (3 tablespoons, diced)
16 - Capers (1 tablespoon, diced)
17 - Fresh parsley (1 tablespoon, chopped)
18 - Lemon juice (1 tablespoon)
19 - Dijon mustard (2 teaspoons)
20 - Salt and pepper to taste

→ For Frying and Assembly

21 - Peanut oil or neutral frying oil (2 quarts)
22 - Hamburger buns (4)
23 - Cheddar cheese slices (2, halved)

# Instructions:

01 - Heat frying oil in large heavy-bottom pan to 375°F and maintain temperature
02 - Combine mayonnaise, Dijon, lemon juice, pickles, capers, and parsley in a bowl. Season with salt and pepper
03 - Cut cod into bun-sized squares (4-6 oz). Season with salt and pepper and place on wire rack over baking pan
04 - Make dry dredge with flour and Old Bay in one bowl. In another, make wet batter by combining remaining flour, seasonings, egg, and sparkling water until salad dressing consistency
05 - First coat fish in dry flour mixture, then dip in wet batter, allowing excess to drip off
06 - Fry each piece for 2-3 minutes per side until golden brown. Drain on wire rack
07 - Steam hamburger buns for 10 seconds over simmering water
08 - Layer bottom bun with tartar sauce, fried fish, cheese half, more tartar sauce, and top bun
