In a medium bowl, combine milk, egg, vanilla extract, and melted butter. Mix thoroughly until well incorporated.

Add salt, baking soda, and sugar to the wet mixture. Stir until combined.

Gradually fold in flour until the batter becomes smooth and free of lumps.

Pour the batter mixture into a gallon-size zip-top bag. Seal and set aside for a few minutes to rest.

Pour vegetable oil into a frying pan to a depth of approximately 1/2 inch. Heat on high for about 2 minutes, then reduce to medium heat.

Check if the oil is ready by dropping a small amount of batter into it. If bubbles form around the edges, the oil is at the correct temperature. If not, increase heat slightly until properly heated.

Cut a small hole in the bottom corner of the bag. Carefully drizzle batter into 1-2 circular shapes in the hot oil. Cook until golden brown on the bottom.

Gently flip the funnel cake bites using a slotted metal spatula. Cook until the second side is also golden brown.

Transfer cooked funnel cake bites to paper towels to absorb excess oil. While still warm, sprinkle generously with powdered sugar.

Serve immediately with whipped cream and/or fresh fruit if desired.
