Garlic Butter Steak Potatoes (Print Version)

01 - 5 lbs NY strip steak
02 - 1 tbsp olive oil
03 - 1 lb baby golden potatoes, quartered or halved
04 - 2 tbsp unsalted butter
05 - 1 tsp dried oregano
06 - 1 tsp dried thyme
07 - 1 tsp dried rosemary
08 - 3 cloves garlic, minced
09 - Salt and pepper to taste

# Instructions:

01 - Place olive oil and 1 tbsp of butter in a skillet over medium-high heat. Add the potatoes, herbs, salt, and pepper. Cook while stirring often for 3-5 minutes, or until fork-tender. Set the potatoes aside.
02 - In the same skillet, add the second tbsp of butter and sliced steak strips. Cook, stirring occasionally, until they reach your desired level of doneness.
03 - Return the potatoes to the skillet to reheat. Adjust seasoning with salt and pepper as needed before serving.
