Place olive oil and 1 tbsp of butter in a skillet over medium-high heat. Add the potatoes, herbs, salt, and pepper. Cook while stirring often for 3-5 minutes, or until fork-tender. Set the potatoes aside.

In the same skillet, add the second tbsp of butter and sliced steak strips. Cook, stirring occasionally, until they reach your desired level of doneness.

Return the potatoes to the skillet to reheat. Adjust seasoning with salt and pepper as needed before serving.
