Garlic Herb Butter Roasted Turkey Breast (Print Version)

# Ingredients:

01 - 2.5-3 kg single turkey breast, skin on, bone in.
02 - 1/2 teaspoon salt.
03 - Black pepper.
04 - 4 rosemary sprigs.
05 - 8 sage sprigs.
06 - 10 thyme sprigs.
07 - 12 garlic cloves, smashed.
08 - 150g unsalted butter, softened.
09 - 1 1/4 teaspoon table salt (for butter).
10 - 1/2 teaspoon black pepper (for butter).
11 - 4 large garlic cloves, minced.
12 - 1 tablespoon finely chopped fresh sage.
13 - 1 tablespoon finely chopped fresh rosemary.
14 - 1 tablespoon fresh thyme leaves.
15 - 1 tablespoon finely chopped fresh parsley.

# Instructions:

01 - Remove turkey from fridge 45 minutes before cooking. Preheat oven to 200C/390F.
02 - Place smashed garlic and herb bunches in middle of baking dish.
03 - Mix softened butter with minced garlic, chopped herbs, salt and pepper.
04 - Loosen skin with spoon, smear 2/3 butter under skin. Spread remaining on surface and underside.
05 - Place turkey on herbs, reduce heat to 180C/350F, roast 1.5 hours, basting every 30 minutes.
06 - Cook until internal temperature reaches 74C/165F. Cover with foil when golden.
07 - Rest 15-20 minutes before carving. Serve with butter pan sauce.

# Notes:

01 - Can be prepared up to 24 hours ahead.
02 - Allow 15 minutes cooking per 500g/1lb of turkey.
03 - Dried herbs can be substituted for fresh.
04 - Reduce salt if using brined turkey.
