Grilled Chicken Avocado Sandwich (Print Version)

# Ingredients:

→ Main

01 - 2 boneless skinless chicken breasts
02 - Salt and pepper to taste
03 - 1 tablespoon olive oil
04 - 1 avocado, sliced
05 - 4 slices cheese (Swiss, cheddar, or provolone)

→ Bread & Spreads

06 - 4 slices bread (sourdough or ciabatta)
07 - 2 tablespoons mayonnaise
08 - 1 tablespoon Dijon mustard
09 - Butter or olive oil for grilling

→ Vegetables

10 - 1 small red onion, thinly sliced
11 - 1 tomato, sliced

# Instructions:

01 - Season chicken, cook in oil 6-7 minutes per side until done. Rest and slice
02 - Slice avocado, prepare cheese, onion, and tomato
03 - Spread mayo and mustard on bread. Layer chicken, avocado, cheese, onion, and tomato
04 - Cook sandwiches in butter/oil until golden and cheese melts, 3-4 minutes per side
