Healthy Avocado Chicken Salad (Print Version)

# Ingredients:

→ Main Ingredients

01 - Ripe avocados (2 large)
02 - Cooked chicken breast (2 cups diced, about 2 medium breasts)

→ Fresh Vegetables

03 - Red onion (¼ cup, finely diced)
04 - Celery (¼ cup, finely diced)
05 - Red bell pepper (¼ cup, diced)
06 - Fresh cilantro (2 tablespoons, chopped)

→ Seasonings

07 - Lime juice (2 tablespoons)
08 - Garlic powder (¼ teaspoon)
09 - Salt and black pepper to taste

→ Optional

10 - Greek yogurt (¼ cup for extra creaminess)

# Instructions:

01 - If using raw chicken, season and cook until internal temperature reaches 165°F/74°C. Cool and dice
02 - Scoop avocado flesh into bowl and mash to desired consistency
03 - Add diced chicken, vegetables, cilantro, lime juice, and seasonings to mashed avocado
04 - Stir in Greek yogurt if using for extra creaminess
05 - Fold all ingredients together, taste and adjust seasonings as needed
06 - Serve immediately or refrigerate 30 minutes to allow flavors to meld
