Hungarian Chicken Paprikash (Print Version)

# Ingredients:

01 - 2 tablespoons pork lard or butter.
02 - 3 pounds chicken pieces, bone-in and skin-on.
03 - 2 medium yellow onions, finely chopped.
04 - 2 cloves garlic, minced.
05 - 2 Roma tomatoes, seeded and diced.
06 - 1 Hungarian bell pepper, diced (optional).
07 - 3-4 tablespoons Hungarian sweet paprika.
08 - 2 cups chicken broth.
09 - 1 1/2 teaspoons sea salt.
10 - 1/2 teaspoon black pepper.
11 - 3 tablespoons all-purpose flour.
12 - 3/4 cup full fat sour cream, room temperature.
13 - 1/4 cup heavy whipping cream.

# Instructions:

01 - Heat lard in heavy pot and brown chicken pieces on all sides. Remove chicken.
02 - Fry onions until golden. Add garlic and tomatoes, cook 2-3 minutes. Remove from heat to add paprika.
03 - Return chicken and add broth. Simmer covered for 40 minutes until tender.
04 - Mix flour with sour cream and heavy cream. Stir into pot and simmer until thickened.
05 - Return chicken to sauce and heat through before serving.

# Notes:

01 - Lard gives most authentic flavor.
02 - Use genuine Hungarian paprika.
03 - Traditionally served with nokedli dumplings.
