Turkey Soup (Print Version)

# Ingredients:

01 - 1 tbsp olive oil.
02 - 1 tbsp butter.
03 - 1 onion or 2 shallots.
04 - 1 large carrot.
05 - 2 celery stalks.
06 - 1 garlic clove.
07 - 4 sprigs fresh thyme or 1/2 tsp dried.
08 - 6 cups turkey or chicken stock.
09 - 1/2 cup pearl couscous.
10 - 2 cups cooked turkey or chicken.
11 - 2 bay leaves.
12 - Salt and pepper to taste.
13 - 1 tbsp fresh parsley, chopped.

# Instructions:

01 - Heat oil and butter in a pot.
02 - Chop onion, carrot, celery, and garlic.
03 - Cook vegetables with thyme over low heat for 5 minutes.
04 - Pour in stock.
05 - Add turkey and bay leaves.
06 - Bring to a boil.
07 - Season with salt and pepper.
08 - Add pearl couscous.
09 - Cook 10 minutes until couscous is tender.
10 - Top with fresh parsley.
11 - Serve hot.

# Notes:

01 - Works with store-bought or homemade stock.
02 - Can substitute noodles for couscous.
03 - Great way to use holiday leftovers or rotisserie chicken.
