Levain Rocky Road Chocolate Cookies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 cup cold butter, cubed
02 - 1 cup brown sugar
03 - 1/2 cup sugar
04 - 2 large eggs
05 - 1 teaspoon vanilla extract

→ Dry Ingredients

06 - 1/2 cup unsweetened cocoa powder
07 - 1 cup cake flour
08 - 1 1/2 cups all-purpose flour
09 - 1 teaspoon cornstarch
10 - 3/4 teaspoon baking soda
11 - 1/2 teaspoon salt

→ Mix-ins

12 - 1 3/4 cups semi-sweet chocolate chips
13 - 2 cups mini marshmallows
14 - 3/4 cup cashews, roughly chopped

# Instructions:

01 - Heat oven to 410°F. Cream butter and sugars for 4 minutes until light
02 - Add eggs and vanilla, mix 1 minute
03 - Fold in dry ingredients, then mix in chips, marshmallows, and cashews
04 - Roll into 5-6 oz balls. Optional: press extra chips and marshmallows on top
05 - Bake 9-11 minutes. Press melted edge marshmallows toward center. Rest 15 minutes

01 - Can substitute all-purpose flour for cake flour
02 - Use light-colored baking sheet for best results
