Mac Cheese Bites (Print Version)

# Ingredients:

01 - 284g bacon (14 strips).
02 - 227g elbow macaroni.
03 - 30g bacon grease or butter.
04 - 16g all-purpose flour.
05 - 270ml milk.
06 - 227g sharp cheddar, shredded.
07 - 227g Monterey Jack, shredded.
08 - Seasonings (salt, pepper, garlic powder, cayenne, nutmeg).
09 - 125g all-purpose flour.
10 - 2 large eggs, beaten.
11 - 180g seasoned panko breadcrumbs.
12 - Seasonings (salt, pepper, onion powder).
13 - Vegetable oil for frying.

# Instructions:

01 - Cook until crispy, save 2 tablespoons grease, chop bacon.
02 - Cook pasta 7 minutes, make roux with grease/flour, add milk and seasonings, mix in cheeses, add pasta and bacon, chill 3 hours minimum.
03 - Cut into 36 squares, coat in flour, dip in egg, roll in panko, freeze until ready.
04 - Cook in batches 4-5 minutes at 360-370°F, drain on paper towels, serve hot.

01 - Can freeze before frying.

03 - Use fresh grated cheese.
