Marry Me Chicken Casserole (Print Version)

# Ingredients:

01 - 2 1/2 cups chicken broth, divided
02 - 1 1/2 teaspoons kosher salt, divided
03 - 2 (6-oz) packages uncooked long-grain and wild rice mix
04 - 2 tablespoons olive oil
05 - 1/4 cup unsalted butter, divided
06 - 4 (6-oz) boneless, skinless chicken breasts
07 - 1/4 teaspoon black pepper
08 - 3/4 cup sun-dried tomatoes, chopped
09 - 1 large shallot, finely chopped
10 - 6 garlic cloves, chopped
11 - 1 teaspoon dried oregano
12 - 1/2 teaspoon crushed red pepper
13 - 2 tablespoons tomato paste
14 - 1/2 cup dry white wine
15 - 1/2 cup heavy whipping cream
16 - 1 tablespoon balsamic vinegar
17 - 1 1/2 oz Parmigiano-Reggiano cheese, grated
18 - Chopped fresh basil, for serving

# Instructions:

01 - Boil 2 cups broth with salt, add rice and cook partially covered for 15 minutes until starting to soften.
02 - Brown seasoned chicken breasts in oil and butter mixture until golden, about 6 minutes per side. Remove and rest.
03 - Cook tomatoes, shallot, garlic and spices in remaining butter. Add tomato paste, wine and broth, reduce. Stir in cream, vinegar and cheese.
04 - Combine rice mixture with sauce in baking dish. Add chicken and bake at 350°F for 30 minutes. Top with remaining cheese and basil.

01 - Use fond from chicken for flavor
02 - Rice should be partially cooked before baking
03 - Let chicken rest before adding to casserole
