Marshmallow Surprise Hot Cocoa Cookies (Print Version)

# Ingredients:

01 - 1/2 cup unsalted butter, softened (113g).
02 - 1/2 cup granulated sugar (100g).
03 - 1/2 cup brown sugar (100g).
04 - 1 large egg, room temperature.
05 - 1 teaspoon vanilla extract.
06 - 1 1/2 cups all-purpose flour (188g).
07 - 1/3 cup natural cocoa powder (27g).
08 - 1/4 cup dry hot cocoa mix (40g).
09 - 1 teaspoon baking soda.
10 - 1/8 teaspoon salt.
11 - 2 teaspoons milk.
12 - 10-11 large marshmallows, halved.
13 - 8 ounces semi-sweet chocolate, chopped (226g).

# Instructions:

01 - Beat butter and sugars until fluffy. Add egg and vanilla. Mix dry ingredients separately. Combine wet and dry. Add milk. Chill 2 hours minimum.
02 - Roll dough into balls. Space on lined sheets. Bake 10 minutes.
03 - Press half marshmallow into each cookie. Bake 2 minutes more. Press marshmallows flat. Cool 10 minutes on sheet.
04 - Melt chocolate in 20-second intervals. Spoon over marshmallows. Let set 30-60 minutes.

01 - Must chill dough.
02 - Use natural cocoa powder.
03 - Don't use chocolate chips for topping.
04 - Can freeze dough or cookies.
05 - Use dry hot cocoa mix only.
06 - Great winter treat.
